- Heat one third of the oil in a saucepan over medium heat.
- Add the jalapeños cooking until they becomes slightly tender.
- Add the onion and garlic, and cook stirring until the onions start to become translucent.
- Pour in the tomatoes and lower the heat. Simmer covered until the tomato is cooked through and the mixture has reduced to a thick sauce.
- Season with some of the salt and pepper to taste.
- Make 4 wells in the sauce and add the eggs.
- Garnish with the cheese and coriander.
- Serve with avocado on the side.
