Preparation

  1. Pat dry the chicken from outside and inside with paper towels.
  2. Spread the marinade inside and outside the chicken.
  3. Stuff the inside of the chicken with onions, lemon slices, whole black peppercorn, cloves, and a cinnamon stick.
  4. With the breast side up, spread the marinade under the chicken skin with a spoon.
  5. Allow the chicken to marinate for 6 to 8 hours or overnight in the refrigerator.

Cooking

  1. Take the chicken out an hour before cooking.
  2. Sauté the chicken in ghee or oil.
  3. Add 240 ml of water to the pressure cooker and place the trivet with chicken inside.
  4. Cook time for 450 g of bone-in chicken is 6 minutes. So a 2 kg chicken the pressure cooking time would be about 24 minutes.
  5. Pressure cook on high for the appropriate amount of time.
  6. Natural release for 10 minutes, then quick release.
  7. Remove the chicken from the pot and remove the stuffing.
  8. Enjoy!
