Preparation
- Pat dry the chicken from outside and inside with paper towels.
- Spread the marinade inside and outside the chicken.
- Stuff the inside of the chicken with onions, lemon slices, whole black peppercorn, cloves, and a cinnamon stick.
- With the breast side up, spread the marinade under the chicken skin with a spoon.
- Allow the chicken to marinate for 6 to 8 hours or overnight in the refrigerator.
Cooking
- Take the chicken out an hour before cooking.
- Sauté the chicken in ghee or oil.
- Add 240 ml of water to the pressure cooker and place the trivet with chicken inside.
- Cook time for 450 g of bone-in chicken is 6 minutes. So a 2 kg chicken the pressure cooking time would be about 24 minutes.
- Pressure cook on high for the appropriate amount of time.
- Natural release for 10 minutes, then quick release.
- Remove the chicken from the pot and remove the stuffing.
